 Nutritionally dense, high protein crepes that taste like they couldn't possibly be healthy! Fill with fruit and top with whipped cream (creme fraiche or coconut cream work well too)!

Makes 5 medium crepes

What you will need:

1/4 cup protein powered pancake mix
1/2 cup milk (or milk alternative)
2 tsp powered erythritol
1 egg
butter
chopped fruit of your choice
whipping cream
Optional:
cinnamon
fresh mint

1/4 cup milk (or milk alternative)
1 egg
2 Tbsp chocolate chips (or more)

How to do it: 

Step 1: Using a fork, whisk 1/4 cup of the mix, with 1/4 cup milk (or milk alternative).

If the batter sticks to the pan when you try to flip it, that may be the result of the following:

  • the pancakes have been poured too big (try 1 TBSP of batter per pancake to start - this looks small, but they expand as they cook)
  • the pan wasn’t warm enough when you started cooking them
  • you haven't cooked that side long enough
  • you are not using enough oil for the type of pan you chose to work with

To simplify it, the easiest way to get a great sweet pancake is this:
1. Grease a non-stick pan (ceramic coated is best for your health instead of Teflon) and set to medium heat on your stovetop.
