Perfect for when you can't eat gluten or corn or don't have any shells on hand, but you crave the taco flavour!
What you will need:
1/4 cup protein powered pancake mix
3 Tbsp water (or 1/4 cup milk or milk alternative)
1/2 cup shredded cheddar
1/4 cup ground beef or beans sauteed in butter and taco seasoning
1/4 cup green onions
1/4 cup chopped cilantro
salt and pepper to taste
Fresh Toppings to taste:
How to do it:
Step 1: Put a generous amount of oil in pan and bring to medium heat.
Step 2: Using a fork, whisk 1/4 cup of the mix, with 3 TBSP water (or 1/4 cup milk or milk alternative).
Step 3: Stir in all remaining ingredients, except toppings.
Step 4: Pour by the Tbsp into 4 or more medium - small sized pancakes or if you have a good non-stick pan, save time and cook it up as one large pancake.
Step 5: Once the surface of the pancakes are bubbly, turn over and cook the other side.
Step 6. Serve with fresh toppings and sour cream.
