Vanilla Protein Cupcakes
11 grams of protein per cupcake, nice dessert option to round up a protein forward meal!
What you will need:
1 cup almond flour
1/3 cup coconut flour
1/2 cup protein powered pancake mix
1/3 cup maple syrup (or Good Good Sugar Free if you want to keep it lower carb)
1/4 cup MCT oil
1/2 tsp salt
1/2 tsp baking soda
2 whole eggs
1 Tbsp vanilla
1 Tbsp lemon or lime juice
optional: Choc Chips, fresh berries or freeze dried ones
How to do it:
Step 1: Pre-heat oven to 350 degrees.
Step 2: Put everything into the bowl in the order listed, stirring in between each ingredient (no need to separate the dry and wet ingredients).
Step 3: Bake for 20 min (or until toothpick comes out clean).
Top with icing of choice (cream cheese icing is my fave) or jam if you prefer the cupcakes to be sweeter!
