How These Pancakes Keep My Blood Sugar Happy

When I first developed the Protein Powered pancakes recipe, I thought I was looking for a solution for other people.

I had pretty much zero desire to eat pancakes, because my experience with them, was that 40 minutes later I was tired and starving again. They would spike and then ultimately crash my blood sugar, and force me to have to eat a second more nutrient dense breakfast - so basically they weren't on the menu for me.

Nutritionally speaking, eating conventional pancakes for breakfast is like eating cake and icing. It's a terrible way to start the day.

As I mentioned in the previous post where I shared in detail how and why I created the recipe, to summarize, it was simply for the purposes of making a bad thing better, for people who just can't imagine living life without pancakes. 

I had no idea that this recipe was also going to be my own solution for getting adequate quality protein, in a hurry, without having to eat a lot of meat (because of the savoury variations). 

Prioritizing protein on my plate, in a balanced way, has been essential to displace what was unbeknownst to me, excessive carbohydrate consumption in my own life, because I perceived myself to be eating the healthiest diet possible.

I woke up to this fact in my mid thirties when I ended up obese, even though I was eating a natural whole foods vegetarian diet.

It just made no sense to me at the time.

It turned out that, being that I am of indigenous ancestry and with my biological father being diabetic, I had a hereditary tendency to easily start sliding down the slippery slope of insulin resistance.

All of that in combination with my high carb, low protein vegetarian diet had culminated into blood sugar issues and raging hormone havoc, that resulted in an excess of another 20 lbs in less than two months - even though I hadn’t changed my diet.

The truth is though, that 1 in 4 Canadians is pre-diabetic, so this doesn’t just affect indigenous people and vegetarians - anyone can eventually become diabetic.

Basically, if you don’t eat balanced meals - or if you eat too many processed carbs, white sugar, processed food in general and/or exclusively eat low quality vegetarian protein alternatives, deficient in essential amino acids, you are putting yourself at risk. 

While I now incorporate small amounts of quality sources of meat into my diet, for nutritional reasons, the truth is that my tastebuds still tend toward eating primarily plant based foods.

While I initially dropped 12 dress sizes by being very strategic about prioritizing protein and reducing carbohydrates (including giving up bread), it’s still always been a challenge to get enough protein on my plate due to my aversion to meat, taste wise.

The truth is, that if the Protein Powered pancake mix only worked like a healthier, low carb, gluten free breakfast pancake, I probably wouldn't have brought it to market, because like I said before, I don't enjoy eating a sweet tasting traditional pancake breakfast in any way, shape or form.

It's the savoury variations that got me hooked and motivated me to bring these gluten free, low carb & high protein pancakes out into the greater community, beyond my family, friends and weight loss clients.

What makes this mix amazing is the SAVOURY variations that replace meat at mealtime. This is not just a breakfast food - Protein Powered Pancakes are great for lunch and dinner too!

The mix has not only been the perfect solution for me to prioritize protein on my plate (as a meat alternative), but it also saves me a ton of time in the kitchen.

I simply add shredded cheese and veggies, to create a whole food, fast food meal that is balanced for protein in 10 minutes or less. By the time the pancakes are ready, I've done most of the dishes!

It's cheaper than fast food - and faster than take out, more delicious and much healthier.

What's amazing is that with a texture and taste that is so reminiscent of wheat, it’s hard to believe that it’s wheat free with only 5 grams of carbs, 4 of which are fibre (great for people with constipation issues too)!

Protein Powered pancakes gives people that ‘flour like feeling’ they crave, but without the fluff (no wheat, gluten, grains, sugar, carbs, nut flour, gums or indigestible starches)!

Now we can all have our pancakes and eat them too!
