Protein Powered Berry Breakfast Muffins (gluten free, oil free, sugar free & egg free)

Makes 12 muffins at 8 grams protein each. Eat 3 for breakfast equalling a total of 24 grams of protein (3.75 grams carbs each, more if you choose to use unrefined sugar)

What you will need:
1 cup almond flour 
1 cup protein powered pancake mix 
2 teaspoons baking powder
1/2 teaspoon unrefined salt
6 - 8 tablespoons powdered erythritol (or unrefined sugar)
1 can coconut milk 
1 Tbsp vanilla extract
cup fresh blueberries or more

How to do it:
Step 1: Preheat an oven to 350°F and grease a muffin pan or use muffin cups
Step 2: Mix all ingredients into one bowl in the order listed, mixing as you go.
Step 3: Divide the batter into 12 muffins (use an ice cream scoop for even measurements).
Step 4: (optional) Sprinkle with cinnamon & brown sugar swerve.
Step 5: Bake for 20 minutes (until a toothpick comes out clean with no batter on it).
Step 6: Cool 10 minutes in the pan and then carefully transfer them to a cooling rack to cool completely.

Store covered at room temperature.
