Fish Cakes

Makes 5 small pancakes

What you will need:

1/4 cup protein powered pancake mix
1/4 milk/milk alternative (or 3 Tbsp water)
1/4 cup celery chopped
1/4 cup fresh chopped green onions
1 can of fish 
red pepper
fresh chopped herbs
shredded cheese
salt and pepper to taste

How to do it:

Step 1: Put a generous amount of oil in pan and bring to medium heat.

Step 2: Using a fork, whisk 1/4 cup of the mix, with 3 TBSP water (or 1/4 cup milk or milk alternative)

Step 3: Stir in celery, green onions and canned fish,

Step 4: Pour batter into well greased pan making 5 or 6 medium small sized pancakes (olive oil works lovely)!

Step 5: Once the surface of the pancakes are bubbly, turn over and cook the other side.

Step 6. Top with mayo.
