Protein Powered Meatballs

Makes 20 medium meatballs at 9 grams of protein each (the average medium beef meatball has 5 grams). This recipe uses a special method to oven bake for a ‘crispy’ meatball that has the texture of being fried (but it’s not)!

What you will need:

"Wet" Ingredients:
1 pound ground beef (I used ground bison in the photo)
2 eggs
1/2 cup finely grated Parmesan or other shredded cheese (I used Feta in the photo)

Dry Ingredients:

1/2 cup Protein Powered Flour
2 Tbsp onion powder
1 Tbsp garlic powder
1 tsp salt
1/2 teaspoon pepper

Optional for more flavour:

1 Tbsp dried parsley
1/2 teaspoon dried basil
1 teaspoon oregano
¼ teaspoon crushed red pepper flakes

How to do it:

Step 1: Set oven to 450 F.
Step 2: Whisk eggs.
Step 3: Press into shredded cheese and ground beef with a potato masher or fork.
Step 4: Top with protein powered flour and seasonings and mix together.
Step 5: Line baking tray with parchment paper and form into 20 meatballs.
Step 6: Pour 3/4 cup water, broth, wine etc. into the baking tray to act as steam. This will ensure that they brown like as though you fried them (which is what I love personally).
Step 7: Bake at 450 for 25 min.
