Coconut Sourdough Protein Pancakes

Sourdough pancakes with coconut sourdough starter!

What you will need:
1/4 cup Protein Powered Protein Flour mix
1/4 cup sourdough starter
2 Tbsp milk/milk alternative (I used organic grassfed half & half)

How to do it:
Step 1: Put a pat of butter in the pan and bring to medium heat.
Step 2: Using a fork, whisk 1/4 cup of the mix, with 1/4 cup coconut starter.
Step 3: Whisk in 2 Tbsp half & half. canned coconut milk or other milk alternative.
Step 4: Spread onto pan into pancake shape (it's not going to be the texture you would expect of a batter, it will be thick and you'll have to spread it out - see photos).
Step 5: Once the surface of the pancakes are bubbly, turn over and cook the other side.

Top with butter and allulose syrup to keep it sugar-free!

Sooooo good, still gluten-free, low carb and high protein!

Prepare to die and go to heaven!

How to make coconut sourdough...
Step 1: Mix 1/4 cup coconut flour with 3/4 cup water in a glass jar.
Step 2: Cover with a cheesecloth and an elastic.
Step 3: Every day stir in 1 Tbsp of coconut flour and 3 Tbsp water.
Step 4: It will be ready after it bubbles, rises and falls.
Step 5: Feed it 1 Tbsp of coconut flour and 3 Tbsp water every day (or any other amount that is 1 part coconut flour to 3 parts water).

If you can't get it "started".... get some from sourdough from someone else and start feeding it coconut flour the way I have outlined until your starter is entirely coconut flour based.
