High protein, gluten free crepes that can be used for both sweet and savoury fillings!
Makes 5 medium crepes
What you will need:
1/4 cup protein powered pancake mix
1/2 cup milk (or milk alternative)
2 tsp powered erythritol
How to do it:
Step 1: Put your pan on the stove on setting 4 and add a small amount of butter.
Step 2: Using a fork, whisk 1/4 cup of the mix, with 1/2 cup milk or milk alternative.
Step 3: Whisk a whole egg into the batter.
Step 4: Use a quarter cup measuring cup to spread into a circle onto a slightly greased non-stick pan.
Step 5: Cook until light brown.
Step 6: Run wide spatula around the edges to loosen and flip.
